Protein Pancakes

 
 

A balanced morning starts with a batch of these protein-packed pancakes πŸ₯ž. First, we combine mashed banana, 2 eggs, baking powder and cocoa powder, then we cook them in a pan while the coffee brews. Top them with nut butter, ED Smith no sugar added jam, or 1/4 cup of fresh berries.

Ingredients:

  • 1 large banana
  • 2 eggs
  • 1/8 tsp. baking powder
  • Β½ tsp. cocoa powder

Directions

  1. Mash banana, add eggs and baking powder and cocoa powder, whisk until combined.
  2. Heat skillet and spray with coconut oil and add 3 tbsp. of pancake batter.
  3. Let cook for 30 seconds and then flip to the other side.
  4. Serve with nut butter, ED Smith no sugar added jam or ΒΌ cup fresh berries.
  5. Add Β½ portion of oats on the side or Β½ portion of yams on the side
