Asparagus & Feta Salad

 
 

I eat asparagus like lettuce. It’s a vegetable that I don’t really think about. Then I put it in this salad, and it became my all-time favorite salad ever. It knocks the socks off anything!

Asparagus & Feta Salad

Ingredients:

  • 1 bunch thick asparagus about 24 spears
  • 3 tablespoons extra virgin olive oil
  • 1 cup cherry tomatoes, sliced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest
  • 1 tablespoon freshly squeeze lemon juice.
  • 1/3 crumbled feta cheese

Directions

  1. Place asparagus spears in baking dish and toss with 2 tablespoons olive oil, salt, pepper
  2. Put asparagus on the grill. Cover and cook asparagus for 3-4 minutes until nicely browned and tender crisp
  3. Remove asparagus from grill and place back in baking dish
  4. Let cool, transfer spears to cutting boar and cut into 1 ½ pieces Place cut asparagus back in dish, top with sliced tomatoes then add remaining tablespoon of olive oil, feta, lemon zest, and lemon juice
  5. Toss gently and season with more salt and pepper if needed
  6. Serve at room temperature or cooled.
