Asparagus & Feta Salad
I eat asparagus like lettuce. It’s a vegetable that I don’t really think about. Then I put it in this salad, and it became my all-time favorite salad ever. It knocks the socks off anything!
Asparagus & Feta Salad

Ingredients:
- 1 bunch thick asparagus about 24 spears
- 3 tablespoons extra virgin olive oil
- 1 cup cherry tomatoes, sliced
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon lemon zest
- 1 tablespoon freshly squeeze lemon juice.
- 1/3 crumbled feta cheese
Directions
- Place asparagus spears in baking dish and toss with 2 tablespoons olive oil, salt, pepper
- Put asparagus on the grill. Cover and cook asparagus for 3-4 minutes until nicely browned and tender crisp
- Remove asparagus from grill and place back in baking dish
- Let cool, transfer spears to cutting boar and cut into 1 ½ pieces Place cut asparagus back in dish, top with sliced tomatoes then add remaining tablespoon of olive oil, feta, lemon zest, and lemon juice
- Toss gently and season with more salt and pepper if needed
- Serve at room temperature or cooled.
