Pumpkin Spice & Everything Nice Cookies!

If you’ve been following me for a while, you know that fall is my favourite season! Anything pumpkin or pumpkin spice has me written all over it!

I love getting into the kitchen after a hot summer and creating recipes just for you! Like this one with pumpkin spice cookies!

No sugar, no wheat and obviously filled with pumpkin!

Ingredients

  • 1 500ml can pumpkin 

  • 1/2 cup monk fruit / or coconut sugar 

  • 1/2 cup liquid coconut oil 

  • 1 egg

  • 1 tbsp vanilla 

  • 2 cups paleo flour 

  • 2 tsp baking powder 

  • 1 tsp baking soda 

  • 2 tsp cinnamon 

  • 1 tsp pumpkin spice 

  • 2 cups Lily’s chocolate chips 

Directions

  1. Pre heat oven to 350 F

  2. Combine pumpkin, sugar, coconut oil, egg and vanilla together and mix until smooth

  3. In a separate bowl, combine flour, baking soda, baking powder, cinnamon, pumpkin spice and mix well

  4. Combine the liquid and the dry and add in chocolate chips

  5. Bake in oven for 12-15 minutes.
