Pumpkin Spice & Everything Nice Cookies!
If you’ve been following me for a while, you know that fall is my favourite season! Anything pumpkin or pumpkin spice has me written all over it!
I love getting into the kitchen after a hot summer and creating recipes just for you! Like this one with pumpkin spice cookies!
No sugar, no wheat and obviously filled with pumpkin!
Ingredients
1 500ml can pumpkin
1/2 cup monk fruit / or coconut sugar
1/2 cup liquid coconut oil
1 egg
1 tbsp vanilla
2 cups paleo flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp pumpkin spice
2 cups Lily’s chocolate chips
Directions
Pre heat oven to 350 F
Combine pumpkin, sugar, coconut oil, egg and vanilla together and mix until smooth
In a separate bowl, combine flour, baking soda, baking powder, cinnamon, pumpkin spice and mix well
Combine the liquid and the dry and add in chocolate chips
Bake in oven for 12-15 minutes.
